No, not Mauritian food but yes, a Mrs T classic. My sister Asiya said she wandered down to the kitchen one Sunday morning and found a plate of french toast waiting for her (to photograph first, of course, before digging in).
For the days when oatmeal or toast simply will not do...
FRENCH TOAST WITH BANANAS
•egg
•milk
•sugar
•bananas
•walnuts
•bread
•butter
Whisk together an egg, half a cup of milk, and a teaspoon of sugar. In another bowl, mash some bananas and mix in some roughly chopped walnuts. Put the banana mixture between two pieces of thickly cut bread (any bread will do. Above, I used a sliced white loaf) and dip them in the batter.
Melt some butter in a frying pan on medium heat and fry the bread for a few minutes on each side till golden brown. Serve immediately with lots of powdered sugar and maple syrup... and tea, of course.
VARIATIONS
One of my favorite brunch places in Ithaca, The Carriage House, serves a divine french toast stuffed with Brie. Fruit jams also work really well or maybe no stuffing at all.
